Yes, Page/Post layout can be changed to have sidebar or full width.
- Edit any post/page
- Go to Genesis Settings tab on Sidebar Settings besides Publish/Update Button
- Change Layout to Full Width Content or Content, Primary Sidebar as required

Demo install not include author box but it still can be enabled which will display very nice author box after single post.
Set author/user gravatar, description and social links by editing user profile at Admin > Users
If you already have a WordPress website established, first navigate to the Gravatar website and sign in with the same credentials you use to sign into your WordPress dashboard.

If you use the One-Click Theme Setup, then the demo homepage will automatically be created for you using Gutenberg editor blocks. You can learn more about Genesis Blocks by going to the plugin page.

When WordPress is not fresh install, demo posts not going to import during one click theme setup.
To import demo posts manually
#1. Admin > Tools > Import > WordPress > Install Now
#2. Unzip Theme Files
Theme Files include demo posts and widgets files that can be found under “demo” folder.
#3. Run Importer
Import coachingplus-posts.xml/recipeblogger-posts.xml/cuisinerecipetheme-posts.xml depends on theme you installed.
#4. Upload file and import
After import, screen will show “All done” message
NOTE: Sometime Featured images not set on import because its how wordpress import work so that may be you need to set manually otherwise import works great.
